I did very well last year with feeding just straight alfalfa with no grain last year. Now I have the opportunity to but some first cutting alfalfa hay no weeds no grass will it be good enough hay to be able to make it with little to no grain last year I had fourth cutting

Is it the protein levels that makes it not good, the stems, or what is it that makes second cutting more desirable ?? Don't know that much about it

In first cutting the stems are heavy and the protein is lower.
The dairies around here only use third cutting, what my hay guy calls candy hay. It's so high in protein you can't feed it to horses at all.
