Can you make Roquefort out of goat milk instead of sheep milk?
Yes. You just need the Roquefort culture. Fankhauser's Cheese Page has a recipe for making blue cheese
I've done it using Blue Cave brand blue cheese and it turns out great. The hardest part is waiting the 6 to 8 weeks for it to get "bleu".
