Chevon Heaven

    This recipe is going to be sent to our local PBS station this week. It was posted on GW under a different name and I got some great raves.
    You can use any cuts but I found that a leg roast will not absorb all the flavor.

    About 8 steaks or chops
    a few splashes soy sauce
    handful each chopped leeks and as much or little garlic as you like
    Tablesp freshly chopped ginger
    Heaping T or so curry
    a few splashes vermouth
    1 can coconut milk
    a few squirts lime juice
    a few sprinkles each Thai basil, lemon grass
    teasp white pepper and teasp sea salt.

    Put in fridge to marinate at least an hour.
    Bake at 300 in covered Dutch oven for 2 hours,
    add chopped greens during the last 15 minutes, serve with rice.

    It's joined my goat receipe book- I can get a can of coconut milk if I remember at the store but is there a subsitute for lemon grass? Also I grow a Keffir lime- Can I use the leaves instead?

    I don't see why not!! Its just a basic Chevon Heaven...theres been times when I've not had all the above ingredients, like you can use onions instead of leeks, Ive used lemon balm leaves in recipes calling for lemon grass etc. I never go by the book, its what cookings all about..whatever you have on hand that works for you!!!

    Thanks- but you said it's a basic Chevon Heavon- I had no idea there was such a thing- :lol:

    Thats cause I just made up a new title from the original! I just want folks to know they can do whatever they want with it to suit their taste and whats in the cupboard.
