Do you pasteurize your milk when making soft cheese?

    We drink our goat milk raw, but I want to start making soft cheeses (like chevre and feta). Do those of you who make cheese pasteurize the milk first, or do you use it raw?

    You don't have to pasteurize it when you make cheese, you can use raw milk :)
