My doe was bred to the buck last week and the week before that. She always carries her tail up and slightly right of her backbone, but now it is much more over to the right when she carries it up against her.

Does this have anything to do with breeding her, or does she just have a wonky tail?

She could have what is called a wry tail, which they will have from birth. Or she could have had it bent a little too much during breeding. I did see two Nubian does at a show one time who both had crooked tails and I heard theirs were from complications during kidding.
