Has anyone made any of these from their home processed meat? I have done my own jerky before from our deer meat and its always good. We usually just use the store bought jerky flavoring kits.
Today I processed a small deer and prepared all of it for snack sticks. They are stuffed into collagen casings and will be going into our Bradley electric smoker. My mouth is watering, I bet they will be good.
If this turns out, I will be filling more deer tags to make more. I really want to try making summer sausage next.

The sticks turned out great!

On the next batch I do I want to experiment with adding cheese. I know most people buy and use high temp cheese for this, but I'm wondering if the "vinegar cheese" I make from my goats milk might work? It doesn't melt so maybe! Just have to shoot another deer now :)
